Mugello goat cheeses are made from goat’s milk and come in fresh, lactic, semi-aged, or aged varieties. They have a compact yet elastic texture and a clean flavor, slightly tangy, with a vegetal note that reflects the grazing pastures. They are not creamy aperitivo cheeses. They are not intense end-of-meal cheeses. They are cheeses of the land. They are eaten young or moderately aged, often on their own or with simple bread. They don’t ask for elaborate pairings. They don’t seek the spotlight.
