Risi e Bisi is a historic Venetian dish, somewhere between a soup and a risotto: creamy but not dry. It is made with rice (traditionally Vialone Nano), fresh peas, broth made from the pea pods, pancetta or guanciale (in some modern versions), and Parmigiano. The result is a fragrant, bright green dish with a sweet, comforting flavor.
