The production of citrus marmalades in the Costiera Amalfitana originated as a traditional preservation technique, developed to make the most of the abundant lemon harvest and extend its use beyond the season. In Amalfi, lemon marmalade has long been tied to home and rural cooking, traditionally prepared by families and small artisanal workshops using the pulp and part of the fragrant peel of the Sfusato Amalfitano.
